Herb-Crusted Lamb with a Rosemary Infusion
Ingredients:
- 1 rack of lamb, trimmed
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- 1 teaspoon of coarse salt
- 1/2 teaspoon of freshly ground black pepper
- 1/4 cup of Dijon mustard
- 1 cup of breadcrumbs
Directions:
- Preheat your oven to 200°C
- In a small bowl, mix the olive oil, garlic, rosemary, thyme, salt, and pepper. Rub this mixture all over the lamb.
- Heat a skillet over high heat. Add the lamb and sear each side for 1-2 minutes until browned.
- Remove from heat. Brush the rack of lamb with Dijon mustard, then coat with breadcrumbs.
- Place the lamb on a roasting pan and bake in the preheated oven for 20-25 minutes for medium-rare, or until desired doneness.
- Let the lamb rest for 10 minutes before slicing. Serve with a drizzle of rosemary infusion sauce (rosemary, garlic, olive oil, and lamb drippings simmered gently).
Lavender Lemon Cheesecake
Ingredients:
For the Crust:
- 1 1/2 cups Arnott’s Marie biscuit crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
For the Filling:
- 250 grams cream cheese, softened
- 1 cup sugar
- 3 tablespoons all-purpose flour
- 3 tablespoons milk
- 3 eggs
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon lavender flowers, edible and finely chopped
- Extra lavender and lemon zest for garnish
Directions:
- Preheat your oven to 165°C. Mix the Arnott’s Marie biscuit crumbs, sugar, and melted butter. Press onto the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese, sugar, flour, and milk until smooth. Add eggs one at a time, beating just until combined. Stir in lemon juice, zest, and lavender.
- Pour over crust. Bake for 55-60 minutes or until center is just set.
- Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen; cool 1 hour longer. Refrigerate overnight.
- Before serving, garnish with fresh lavender flowers and lemon zest.
